The Dietrich family has been farming grapes in Alsace since 1600. While grapes were one of many crops cultivated by the family, the focus became grape growing with the leadership of Yves Dietrich, who in 1999 converted the family holdings to organic, and in 2003, biodynamic viticulture. His sons Pierre and Jean took over in 2016 and decided to bottle their own wines instead of selling to the local cooperative. The cellar, made entirely of straw, maintains a year-round temperature of 55.4°F (13°C) and is the largest straw bale structure in Europe. Achillée means “yarrow” in French, which
