Grapes are harvested by hand and pressed immediately, then fermented with indigenous yeasts in temperature-controlled, stainless steel tanks. Fermentation is stopped at just over 20 g/l RS. 5.5g/l acid. An extremely balanced wine! Bruno and Jean-Michel Pieaux are the fourth generation of their family to grow wines from the terroirs of Vouvray. their 30 hectares of Chenin Blanc are planted to the soft chalk "tuffeau" soils, classic to the appellation, which also contains flint adding complex minerality to the wines. The work in the vineyards is done without chemical treatments and vinification is conducted with indigenous yeasts.
