Winemaker Notes: Organic, vegan. 100% Grolleau from 30 year-old vines planted to the local black schist. A short maceration and fermentation with indigenous yeasts. Free run juice only is then moved to concrete tanks for six months' aging.
Talented winemakers Dominique Sirot and Alexis Soulas met while working in Corsica. Both are passionate about organic viticulture and low intervention methods in the cellar, so they decided to partner on creating an estate. Here they have created Fief Noir, where they grow authentic, expressive, terroir wines with respect for the land and the traditions of the region while innovating at the same time.
