Description
Organic hand harvested Pais planted in 1800. 40 hl/ha = Granitic = 3065 bottles. The wine fermented spontaneously with foot-trodden whole clusters. The vinification is very smooth - practically an infusion - in concrete vats. 9 months in concrete vats with 35% of the yield aging in 6-year-old 225L barrels. Unclarified and unfiltered. Small addition of sulfites prior to bottling.
