Castello di Stefanago, Provincia di Pavia Pinot Grigio Macerato 2023 (750ml)

100% Pinot Grigio from 30 year old vines planted on 2.6 hectares of clay soils in Oltrepò Pavese, the historical region making up the southern portion of the province of Pavia, in the northwest Italian region of Lombardy. The grapes are hand-harvested on August 25th. Hand harvesting is done in two passes, the first is used to build the ambient yeast for the remainder that is to be harvested. The grapes are not de-stemmed and spend one week macerating in stainless steel tanks, followed by spontaneous fermentation with ambient yeasts that last 21 days under temperature control. The wine spends six months on the lees while aging for that time. Unfined and unfiltered.
