Description
Champagne Blanc d'Assemblage by Chavost is a blend of 50% Chardonnay and 50% Pinot Meunier from grapes grown on the Domaine's 5 hectares of vineyards in Chavot-Courcourt, a commune south of Epernay in the Vallee de la Marne, which have been officially converted to organic farming.
The cuvee is made only from the juice of the first pressing (tete de cuvee) and among its special features is the use of concentrated grape must during the vinification process. Vinified 70% in temperature-controlled stainless steel vats and 30% fut de chene, this Champagne has no added sulfites, and it is characterized by spontaneous alcoholic fermentation and malolactic fermentation through the use of indigenous yeasts and bacteria. The wines also undergo no clarification processes before bottling. No final dosage (0 g/L - Brut Nature).
The Champagne Blanc d'Assemblage releases powerful aromas of red fruits and candies on the nose, enriched by milky and buttery sensations. The palate is vinous and pleasant, a perfect balance between structure and softness. Flowing and satisfying, it is extremely gastronomic both at aperitif time and throughout the meal, and is highly appreciated by enthusiasts and others.
