100% Syrah. Organic and biodynamic. This Cuvee comes from 2 plots of Syrah located in Vaison la Romaine near the chai. ~35 year old vines, clay, loam, and sandy soils. Hand picked, 2 bottlings, March & June after harvest. 50% whole cluster 50% destemmed. Short fermentation. Aged on malo lees without racking for 8 to 10 months. No sulfur added.
