Description
The trail-blazing, and truly independent vigneron Clotilde Davenne crafts precise, soulful wines from the best terroirs in Chablis and the Cotes d'Auxerres. She farms her 18 ha of vineyard meticulously, without the use of chemicals, and harvest is conducted manually. In the cellar, the wines are vinified in stainless steel and all the whites undergo full malolactic. 100% Aligote from 10 year old vines in the village of Saint-Brie le Vineux in the Yonne Valley. De-stemming and pneumatic pressing followed by natural yeast fermentation in temperature controlled stainless steel tanks. 8-12 months aging in tank, then filtered and bottled.
