Description
Biodynamic 9-to 22-year-old Pinot Noir vines in a mixture of Trumao (compacted volcanic sand) and Fluvial sand. 10 Hl/Ha. 2,000 bts produced annually. Hand harvested then the bunches are literally destemmed berry by berry. Fermented in large, old native barrels ( Raulí / Alerce wood) for one month. Malolactic fermentation happens with the berry still intact resulting in a bright, non-intrusive carbonic maceration. No juice is extracted during the first 10 days. Then the berries are gently stepped on 3 or 4 times throughout the fermentation in order to spread the heat and extract color without extracting any tannins. The wine is then pressed with a very old wooden manual cage press. Each plot is separated in pipes of 225 liters. No Filtration - and the absolute minimal sulfites are added--and only under great duress.
How it tastes: This Pinot Noir, has intense red fruits (cherries, strawberries, blackberries, raspberries) typical of Pinot noir, with a refreshing acidity representative of the volcanic terroir. Tannins are supple and soft, and the finish ends with a light menthol note. Drink now or wait another 3 years and serve it with a slight chill.
