Suggested food pairing: Sea bass in foil, Risotto with

shrimps and peas, Ravioli with ricotta cheese and

Grapes are picked in bins with a capacity of 3 quintals.

Grapes are destemmed and pressed immediately,

followed by static cleaning at low temperatures.

Controlled fermentation takes place at 15°C /16°C for 15

days.

Refinement takes place in stainless steel vats.

Young, crystalline, limpid wine with straw-yellow tones.

Very fresh on the nose, flowers and white pulp fruit with

hints of menthol and aromatic herbs. Palate with good

elegance, which has a clean progression with hints of

bitter almond in the finish.



Fresh and very persistent on the palate, a finish with delicate hints of bitter almonds typical of Soave. It is ideal at any time of day.



Notes from Jan D'Amore Wines

In the year 2000 the seven Morini cousins decided to join forces and start vinifying the grapes from the vineyards that belonged to their fathers for more than 40 years. The name of the estate originates from the Latin name of their home town, Illasi: the Roman troops on their way to conquer the northern “barbaric” regions founded villages in the sheltered valleys of the Valpolicella and planted vines and olive trees. Latium released the first Amarone in 2007 a wine that embodies the style of the estate: fruit driven, lush and rich and yet retaining great elegance and drinkability.
