The ‘Hautérivien’ cuvée from Denis and Isabelle Pommier (whom we’ve recently become huge fans of) is, in our opinion, exactly what every Petit-Chablis should be: refined and precise, but moreover welcoming, and deliciously drinkable.
Grapes are sourced from a blend of parcels in the villages of Lignorelles and Villey where the combination of limestone and kimmeridgien soils yield a fruity, mineral wine meant to be consumed young (and often!).
WINEMAKING : Hand-harvested; sorting occurs in vineyard & winery; fermentation / MLF in tank; aged sur lie in tank for 6 months.
FARMING : Organic (Practicing)
