Vineyard & Winemaking: Aged 10 months in neutral oak barrels to achieve a rich, velvety soft texture. We de-stem the grapes and perform daily rack-and-returns (called délestage) along with morning and evening punch-downs to extract more complex fruit and tannin. This labor of love in the cellar results in a wine that is dense in flavor, smooth in texture and long/satisfying as it finishes.
Tasting Notes: Robust notes of cedar and dried figs on the nose. Medium-bodied with rich notes of black plum and dried blueberries, all culminated in a soft black cherry finish.
Food Pairing: Barbecued meats, burgers, braised short ribs, black forest cake with amarena cherries.
