Description
Organic and biodynamic practices. Hand-harvested Carignan from vines planted in 1993. A tiny single .03 Ha vineyard of granite soils overlooking the Pacific Ocean. Extremely limited production. Native yeast, and natural malolactic fermentation. The extraction is very subtle as the skins are basket pressed. The wine is aged in concrete vats without racking, and after 14 months the wine is bottled after undergoing a very coarse filtration. Minimal sulfites. Hombre en liamas = Man on fire.
How it tastes:
The cold Pacific climate and the fact that the vineyard is located at the top of the Itata hills has a big impact on shaping this wine. Full of character, vibrancy and complexity with textural tannins, it is a must for those looking to experience a singular expression of Carignan. Fresh and herbaceous with notes of black fruits. Drink now or cellar for ten to fifteen years
