Organic farming methods that are gradually being converted to biodynamic. Hand harvested 95% Cinsault and 5% Cariñena vines planted in 1950 that are thriving on Granitic slopes. 45 to 50 hl/ha =6772 numbered bottles. Grapes were hand harvested and de-stemmed, fermented with native yeasts in concrete and cocciopesto amphoras during 18 days at 24 to 26°C with the help of punch downs and pump overs. Total maceration time was 25 days. After maceration 13% of the wine was aged in used barrels, 7% was aged in stainless steel tanks and 80% was aged in cocciopesto amphoras for 10 months prior bottling. Minimal sulfites. How it tastes: Exceptional expression of old vines Cinsault. The wine is fruit forward with presence of red fruits such as raspberry and cherry. The wine also shows beautiful minerality from the granitic soil it comes from. Drink now or hold for five years.
