Appellation: Champagne
Location: Village of Polisot, in the Southernmost region of Champagne, the Côte des Bar (Aube).
Variety: Pinot Blanc
Viticulture: From a single vineyard called ‘Val Colas Robin’ planted by winemaker Roland’s father Robert using selection massale in 1955. Soils are Kimmeridgian clay and vines have a Southern exposition. Farming is certified biodynamic (Demeter).
Vinification: Grapes are hand-harvested, directpressed into stainless steel tank, and fermented spontaneously with indigenous yeasts. The base wine ages for 10mo in a combination of stainless steel (80%) and used oak barrels (20%), then undergoes secondary fermentation in bottle. The wine rests on the lees in bottle for 5 years, then is disgorged with no dosage.
